A high-protein lunch for busy days on a GLP-1 plan
By the Everlon founding team · · How we write and review health content
A high-protein lunch for busy days on a GLP-1 plan works best when it's already made. This bowl takes a few minutes on a Sunday and covers two or three lunches.
Chicken and bean bowl
You'll need
- Cooked chicken breast, sliced or shredded
- A can of black beans, rinsed
- Cooked rice or another grain
- Chopped vegetables: peppers, tomatoes, cucumber or whatever you have
- Salsa or a squeeze of lime
Steps
- Divide the grain between two or three containers.
- Add the beans, the chicken and the vegetables.
- Keep them in the fridge. At lunch, add the salsa or lime.
Cooking or reheating the chicken
USDA's guidance is to cook poultry to 165°F, and to reheat leftovers to 165°F too. A food thermometer is the easy way to check.
Swaps
- Tuna: a can of tuna in place of the chicken; no reheating needed.
- Tofu: firm tofu, cubed and pan-browned, in place of the chicken.
